Farfalle with Augula, Sausage, and Garlic

1 pound arugula (I always use spinach)
1/4 cup olive oil
1 medium onion, chopped
2 garlic cloves, chopped
4 ounces sausage
1/4 teaspoon cheyene
1 pound pasta
1/2 cup parmesan
salt to taste

Cook the onion over medium heat. Add garlic and cook about 1 minute. Add sausage and cheyene and cook. Add spinach in four or five additions, stirring until each batch wilts until adding another. Cover, reduce heat to medium-low until spinach is tender.
Meanwhile, bring water to boil and cook pasta. Scoup out about 1/2 cup of cooking water then drain pasta. Combine pasta with spinach/sausage mixture and add 1/4 cup of olive oil and mix well. Add parmesan and toss, adding enough of the reserved pasta water to moisten the pasta if need. Season with salt.

Breakfast cookie

Mom, isn't the breakfast cookie recipe in that great recipe book I made for you years ago?!? Surely it's in there... ;-)

I thought I still had that recipe. In fact, I really feel like I just saw it. But, maybe I saw it at your house when I was going through the basket of recipes on the fridge?? Anyway, I can't seem to find it now. I looked a little online and this recipe looks the most similar, but I can't even remember if the one I made had some sort of cereal in it or not...I just remember the applesauce. And I know I used at least some, if not all, whole wheat flour.

BREAKFAST COOKIES

1 3/4 c. flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 c. shortening
1 c. sugar
1 egg
1 tsp. baking soda
1 c. applesauce
1 c. raisins
1 c. Bran Buds cereal
1 c. oatmeal

Cream shortening, add sugar. Continue to cream. Add egg. Combine soda and applesauce. Add to creamed mixture, alternately with dry ingredients. Add raisins, bran and oatmeal. Bake for 10-15 minutes at 350 degrees.

Chocolate Chip Cookies with CHICKPEAS!!!

From Deceptively delicious...pretty good!

Ingredients

1 cup brown sugar
3/4 cup margarine
2 egg whites
2 tsp vanilla extract
15oz chickpeas- chopped/mashed
12oz chocolate chips
2 cups flour
1/2 cup oats
1 tsp baking soda
1/4 tsp salt

Directions
Preheat to 350. Coat a baking sheet with cooking spray.

Sausage Casserole

I made this for mothers day for mommy and she said it was the best casserole shes ever had. The kids really liked it too!

1 pound sage flavored breakfast sausage
3 cups shredded potatoes
1/4 cup butter melted
12 ounces mild cheddar cheese,shredded
1/2 onions,shredded
1 (16 oz) container small curd cottage cheese
6 eggs


1.)Preheat oven to 375 degrees. Lightly grease a 9x13 inch sq. baking dish.

2.)Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain,crumble,and set aside.

3.) In the prepared baking dish, stir together the shredded potaotoes and butter. Line the bottom and sides of the baking dish with the mixture. In abowl, mix the sausage, cheddar cheese, onion, cottage cheese, and egg. Pour over mixture.

4.) Bake 1 hour in the oven, or until a toothpick comes out clean. Let cool for 5 minutes before serving.

I made this the night before and it turned delicious!

Rosemary bread

The other night I made this with homemade cream of chicken soup--- I got great reviews at the Bluebird!

INGREDIENTS
1 cup water
1 1/2 teaspoons dry yeast
3 tablespoons olive oil
1 1/2 teaspoons white sugar
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 tablespoon dried rosemary
2 1/2 cups bread flour

Brush with olive oil.
Bake at 375

Cajun Chicken Pasta

This is one of the best meals I have made in a long time. And so quick and easy. I think it took about 30 minutes from start to finish. I am so the next Rachael Ray! ;-)

The original recipe calls for mushrooms, but Peter doesn't like them, so I nixed that. I think it'd be really good with asparagus. Ohhhh, or squash/zucchini. Other changes I made: I used half and half rather than the heavy cream - the sauce does seem thin at first, but after I poured it over the pasta, I let it sit for five minutes or so and it thickened up perfectly. Also, I didn't have lemon pepper, so I squeezed half a fresh lemon over the chicken as it cooked. It added a great zing, but didn't taste like lemon pasta!

Cajun Chicken Pasta
1 pound linguine pasta
4 skinless, boneless chicken breast halves, cut into bite size pieces
1 tablespoon and 1 teaspoon Cajun seasoning
1/4 cup butter
3 bell pepper, sliced
4 green onion, chopped
2 cups heavy cream
1/2 teaspoon dried basil
1/2 teaspoon lemon pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 cup grated Parmesan cheese

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until almost tender (5 to 7 minutes). Add the bell peppers and green onions. Saute and stir for 2 to 3 minutes. Reduce heat. Add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through. Add the cooked linguine, toss and heat through. Sprinkle with grated Parmesan cheese and serve.

Apple Strudel Muffins

I made some really good apple muffins over the weekend. I think they are just as good as the banana crumb muffins....just with apples. I got the recipe from allrecipes, but I'm going to put it in here with my modifications...

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4-1/2 teaspoon nutmeg (depending on how much you like nutmeg)
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 cups chopped apples (I used my food processor and shredded the apples, since I thought it would go over better with the boys. And I used a little more than 1 1/2 cups I think.)

1/3 cup packed brown sugar
2 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon butter

DIRECTIONS
Preheat oven to 375 degrees F. Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

Cheesecakes for 100!

INGREDIENTS
12 vanilla wafers
2 (8 ounce) packages cream cheese, softened
2 eggs
2 tablespoons lemon juice, fresh is best
2/3 cup white sugar
1 (21 ounce) can cherry or blueberry pie filling or mini chocolate chips

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Line muffin tins with 12 paper baking cups. Place a vanilla wafer in each one.
In a medium mixing bowl beat cream cheese until fluffy. Add eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined.
Fill each baking cup 2/3 full with cream cheese mixture.
Bake in preheated oven for 15 to 17 minutes. Cool on a rack. Top with fruit pie filling.

Black Bean Tamale Pie

Mer, sorry it took so long for me to post this....

Ingredients:
1/2 pound ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
1 cup salsa
1 package (8-1/2 ounces) corn bread/muffin mix
1/4 cup milk
1 egg
2 cups (8 ounces) shredded cheddar cheese, divided

Directions: In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in beans and salsa; set aside. In a bowl, combine the muffin mix, milk, egg and 1 cup cheese. Pour into a greased 9-in. pie plate. Bake at 375° for 5-6 minutes. Spoon beef mixture over crust, leaving a 1/2-in. edge. Bake for 15-18 minutes or until crust is golden brown. Sprinkle with remaining cheese. Bake 1-2 minutes longer or until cheese is melted. Serve with sour cream and olives if desired. Yield: 6-8 servings.

Corn Waffles and Strawberry Butter

I think I'm going to make this for dinner tonight. Yum.

Waffles

1 cup flour
1/2 cup yellow corn meal
4 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg
2 tablespoons melted unsalted butter
1/2 cup water
1 cup fresh corn, removed from cob just before adding (I've used canned and frozen)
1 teaspoon real vanilla extract

In a large bowl, mix together the flour, corn meal, sugar, baking powder, and salt. In a separate large bowl, whip together the egg, 2 tablespoons melted butter, water, corn, and vanilla. Add the egg mixture to flour mixture and mix until just combined. Heat and oil waffle iron, and cook waffle according to manufacturer’s specifications.

Strawberry Butter

1 10-ounce package frozen sweetened strawberries, thawed
1 cup (2 sticks) unsweetened butter, room temperature
3/4 cup powdered sugar
1 1/2 teaspoons grated orange peel

Combine all ingredients in processor. Blend until smooth, scraping bowl occasionally, about 5 minutes. Transfer strawberry butter to medium bowl. Cover and chill. (Can be made 5 days ahead. Keep chilled. Bring to room temperature before serving.)

Strawberry Oatmeal Muffins

3/4 cup sugar
1/3 cup butter (they say margarine)
2 eggs
1/4 cup skim milk
1/2 cup applesauce
1 Tbsp lemon juice
1 tsp. grated lemon peel
2 cups whole wheat flour
1 Tbsp. baking powder
1/2 tsp. salt
1 cup quick cooking oats
1 cup strawberries

Preheat oven 375 degrees. Cream sugar and butter. Mix in eggs, milk, applesauce, lemon juice, and lemon peel. In another bowl, combine flour, baking powder and salt, then mix in the oats. Slowly add the dry ingredients mixing well by hand. Coarsely chop the strawberries and add them to the mixture. Bake 20 minutes or until knife comes out clean.
(Add other fruit if desired.)
Each muffin is 141 calories and 4 grams of fat.

Oven Pancakes

It looks fun to make.  
Mom, I'll make this either on Friday or Saturday morning.


Ingredients:
1 1/2 cups flour
1 1/2 cups milk
4 eggs
2 tsp sugar
4 Tbsp melted butter/margarine

Directions:
Pre-heat oven to 400 degrees
Grease 9x13 baking dish/pan well
Beat eggs until fluffy. Add remaining ingredients & beat well
Pour into baking dish
Bake for 30 min., but check at 25 min.

Two Ways to Serve:
1. syrup & butter
2. butter, powdered sugar, lemon juice (lightly dripped over your piece). Weird, but it tastes GOOD!!!! I dare you to try it :-)

Chicken Enchiladas

I think this is Aaron's favorite. They are really good! It's a little more work and a little more mess than I normally do, but it's worth it.

1 pound boneless skinless chicken breast
1/2 cup water
5 t minced garlic, divided
1 cup finely chopped onion
4 t oil
2 cans (4 oz each) chopped green chilies
4 t chili powder
1 1/4 t salt
1 t cumin
1 t oregano
1/8 t pepper
1/2 cup flour
1 1/2 cups chicken broth
1 cup milk
2 cups mexican (I use cheddar) cheese
12 totillas (I think I only end up using around 8)
1 cup thinly sliced green onions, divided

In a saucepan, bring the chicken, water and 2 teaspoons of garlic to boil. Reduce heat; cover and simmer for 15-20 min or until chicken is no longer pink. Remove chicken; reserve liquid. Cut chicken into thin strips. Set aside.
Saute onion in oil until tender. Add remaining garlic and saute for 1 min. Add chilies and seasoning; saute 1 min. Stir in flour until blended. Gradually stir in 1 1/2 cup chicken broth and milk. Bring to a boil over medium heat; cook and stir 2 min or until thinkened. Remove from heat. Add 1 cup cheese; stir until melted. Combine 1 cup cheese sauce and chicken; set aside.
Heat broth from cooked chicken. Dip tortillas, one at a time, in hot broth just until limp, about 4 seconds on each side. Spoon about 1/4 cup of chicken mixture down center of each tortilla; sprinkle with 1 T green onion. Roll up and place seam side down in a 9x13 pan coated with cooking spray. Pour remaining sauce evenly over torillas.
Cover and bake at 400 for 20-25 min or until heated through and bubbly. Sprinkle with remaining cheese; cover and let stand for 5 min. Garnish with remaining green onions.

Banana Chocolate Chip Muffins

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon Salt
1 egg
1/2 cup Miracle Whip or mayo
3 ripe bananas (the riper the better!)
1 cup chocolate chips

1. In large bowl, combine dry flour, sugar, baking soda, and salt.

2. In medium sized bowl, beat egg. Add bananas and mash thoroughly, using a potato masher.Stir in Miracle Whip. Add to dry ingredients and stir just until moistened. Add chocolate chips.

3. Fill paper lined muffin tins 3/4 full; Bake at 375 degrees for 20-25 min or until muffin tests are done with toothpick. Allow muffins to cool 5 min in the pan, and then remove to wire racks to finish cooling. Store loosely covered to prevent stickyness. Makes 12 muffins.

Pomelo

Have you tried these yet? They are twice the size of grapefruit, and at least two times as delicious. The have the general flavor of a grapefruit without ANY of the sour, tart, bitter taste. Just pure sweet goodness. I just gave myself a stomach ache from eating an entire one of these beauties - they are that good. (I've also seen them labeled as pummelo...)

TONIGHT, TONIGHT! (sing!)

Well! Tonight is a matchingmaking dinner! The Sprauls are having me and another girl (26ish) with 4 guys to play Euchre. :) The guys are kinda of my choosing and their recommendation; Jason Berrus, Josh Coover, Greg Brown, and Justin Leighty. Justin is to add fun as he is the young one but super fun. The other guys are 28-30 and maybe scared.

We'll start off with pizza and then play the game (I know scary!). I'm bringing the Oatmeal PB and the chocolate chip cookies Alissa posted yesterday. A funny thing is that I'm doing a Cosco run for Beth today and bringing it with me in Greg's car who is picking a few up. Anyway! Kinda strange but pray! I want to be content with God's will, it may not even be any of these guys...What will likely happen is that Greg, Beth's husband will get together privately and push the (possible) interested one along. :) The other girl, Mary, is really sweet and needs to be married too! Pray!

Alice Meyer's Oat Burgers

2- 1/2 cup water
2 T soy sauce
1/4 cup oil
1 teaspoon garlic powder
1 onion
1/4 teaspoon Italian seasoning
2 T Basil
2 Bay leaves
3 cups of oats
1 cup of cashews

Cook all seasonings together for 15 minutes. Simmer. Sprinkle oats and nuts in water ( do not stir). Set aside to cool. Drop by spoonfuls in oiled cookie sheet and press flat. Bake 350 degrees until brown, 30 minutes. Yummy!!

INGREDIENTS
1 cup warm milk (110 degrees F/45 degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

DIRECTIONS
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving

Rachel, do you make biscuits much? This is a really good recipe. Mer and Mommy have made these before. I use all butter instead of shortening. I think I'm going to make these tonight to go with my roast since I don't have time to make bread.

Roasted Salmon with Cucumber Sour Cream

Mommy's French Toast

Whole Wheat Pancakes

INGREDIENTS
1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 egg
1 cup milk, plus more if necessary
1/2 teaspoon salt
1 tablespoon artificial sweetener OR 2 T Sugar

I add a mashed banana with alittle cinnamon. :)
Chocolate chips are good too!

DIRECTIONS
Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.
Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbly, about 1 1/2 minutes. Turn, and continue cooking until golden brown.
Note

You may need to use more milk than 1 cup. The batter should be thin enough so that it pours, but not so thin that it's runny. We find that 1/4 cup additional milk is about the maximum needed.

Chocolate Cookies

This is my favorite chocolate cookie. I add different chips all the time...white chocolate, mint chips, caramel, peanut butter chips, chocolate... I use 1 cup of brown sugar and 1/2 cup of white sugar instead of all white.

Whipped Shortbread Cookies

Well, I have to put a recipe that is great with tea. :) It's probably good with coffee too, though. :) These cookies do really melt in your mouth. It's a lighter shortbread. I've also put chocolate chips in these. They're very white cookies. Different, but pretty and yummy.

INGREDIENTS

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened.
Turn dough out onto a lightly floured surface, and knead briefly. Roll dough out into a 1/2 inch thick round. Cut into 8 wedges, and place on the prepared baking sheet.
Bake 15 minutes in the preheated oven, or until golden brown.

EASY EGG NOG

INGREDIENTS
1 eggs, beaten
1 tablespoon sugar
3/4 cup low-fat milk
1/4 teaspoon rum extract
1 dash ground nutmeg
DIRECTIONS
Blend together eggs, sugar, milk, extract, and nutmeg.

BBQ Glazed Homemade Meatballs

I don't have the recipe from the Boyces, but this one is just like it....I don't remember if we did evaporated milk, though. I think we just did milk.

Santa Fe Chicken

This is an easy crockpot meal that I made the other day.

2 cans black beans, drained and rinsed
2 c. frozen corn
2 c. salsa
3 boneless, skinless chicken breast
1 - 8 oz. pkg. cream cheese

Combine black beans, corn, salsa in crockpot. Place chicken over top. Cook on low for 4-5 hours. Remove chicken, shred and return to crockpot. Add cream cheese and stir until melted. Serve over rice or in tortilla shells.

Meatballs?

Does anyone have the meatball recipe that we used to always make? I've been wanting to make it, but don't trust myself to guess the recipe.

Bermuda Salad

I still make this bermuda salad dressing when I take salads places. People here in MT call it "Rachel Rae's Special Salad dressing." ;-)

Unbelievable Rolls!

INGREDIENTS
3/4 cup milk
3/4 cup water
1/2 cup white sugar
1 teaspoon salt
2 eggs
5 teaspoons active dry yeast
5 cups all-purpose flour
1/2 cup margarine, melted

DIRECTIONS
In a medium saucepan over medium heat, warm milk, water, and sugar. Remove from heat, and mix in the eggs and yeast.
Measure flour and sugar into a large bowl. Make a well in the flour, and pour milk mixture into it. Do not stir. Cover with a lid, and let stand for 20 to 30 minutes.
Pour melted margarine into flour, and mix well. Add more flour if too sticky. Knead lightly. Cover, and let rise for 20 to 30 minutes.
Shape the dough into rolls, and place on a baking sheet. Let rise again for 20 to 30 minutes.
Bake rolls in a preheated 400 degrees F (205 degrees C) oven for 15 minutes, or until done.

So unbelievable!....just really easy for me ;)

Chex Muddy Buddies

Peanut Butter and Chocolate.....need I say more? :)

1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup of butter
1 teaspoon vanilla
9 cups chex cereal
1 1/2 cups powered sugar

Melt chocolate chips, peanut butter, and butter in microwave for 1 minute. Stir. Microwave for 30 seconds longer or until mixture is smooth. Stir in vanilla.
In a large bowl, place cereal. Pour chocolate mixture over cereal, stirring until evenly coated. Pour into 2 gallon ziploc bag.
Add powdered sugar. Seal bag and shake until well coated. Store in airtight container and refrigerate.

Chicken in a Pot

I love throwing this together in a pot and having yummy moist chicken everytime. I normally put squash instead of the mushrooms and I serve it with rice. The sauce is great!

INGREDIENTS
3/4 cup chicken broth
1 1/2 tablespoons tomato paste
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/8 teaspoon salt
1 clove garlic, minced
4 boneless, skinless chicken breast halves
3 tablespoons dry bread crumbs
2 teaspoons olive oil
2 cups fresh sliced mushrooms

DIRECTIONS
In a medium bowl, combine the broth, tomato paste, ground black pepper, oregano, salt and garlic. Mix well and set aside.
Dredge the chicken in the bread crumbs, coating well. Heat the oil in a large skillet over medium high heat. Saute the chicken in the oil for 2 minutes per side, or until lightly browned.
Add the reserved broth mixture and the mushrooms to the skillet and bring to a boil. Then cover, reduce heat to low and simmer for 20 minutes. Remove chicken and set aside, covering to keep it warm.
Bring broth mixture to a boil and cook for 4 minutes, or until reduced to desired thickness. Spoon sauce over the chicken and serve.

Baked Parmesan Chicken

Oh, isn't this fun?!?! ;-)

Alissa, that recipe reminds me of one that I really like:


1 c. crushed shredded wheat
1/3 c. grated parmesan cheese
1/4 t. oregano
1/4 t. pepper
1/2 t. salt
1 clove garlic, minced
1/2 c. melted butter
6 halves of bonless chicken breast

Combine shredded wheat and spices. Roll chicken in melted butter, then spiced crumbs. Place in greased 9 x 13 inch dish and pour any remaining butter over chicken. Bake at 375 degrees for 55 minutes.

Famous Butter Chicken

This recipe is really good and easy. Great with mashed potatoes. I halved this recipe and I only used about 2 Tablespoons of butter.

INGREDIENTS
2 eggs, beaten
1 cup crushed buttery round cracker crumbs
1/2 teaspoon garlic salt
ground black pepper to taste
4 skinless, boneless chicken breast halves
1/2 cup butter, cut into pieces

DIRECTIONS
Preheat oven to 375 degrees
Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.
Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
Bake in the preheated oven for about 15-20 minutes(depends on how thick the chicken is), or until chicken is no longer pink and juices run clear.

Szechwan Peanut Chicken

Mer asked for this one a few weeks ago. I like this because it's fast and easy AND it has peanut butter in it. :-) I have yet to add the green onions and peanuts, but I imagine that it would only make this better.

4 chicken breasts
4 t. soy sauce
1 clove garlic, minced
2 t. ginger, minced
1 T. peanut or vegetable oil
1 red pepper (cut 3/4 inch)
1/2 c. picante sauce/salsa (I use a little more)
2 T. peanut butter (again, I use more)
3 green onions, cut diagonally
1 T. chopped peanuts
Hot Rice for 4

Place chicken in bowl with soy sauce, garlic, and ginger to marinate for at least 10 minutes. Begin rice. Heat oil in 10 inch pan; cook chicken 3 minutes or until not pink. Add peppers, picante sauce, and peanut butter. Add onions, peanuts and heat through. Serve over rice with extra chopped peanuts on top.
