Roasted Salmon with Cucumber Sour Cream

Oh, but you are so wrong Mer! I DO have a recipe - in fact, I just made it a week or two ago. I sure hope your Salmon doesn't actually smell fishy though. Bleh! ;-(

BTW, for changes: the cucumber sour cream, I used only spinach, no arugula. And I substituted broth for the white wine in the salmon marinade (only because I was out of white wine...I think the wine is better).

Is that not a waste to throw the marinade out?? Did you cook it with it? I'd rather not wait for it to marinade too. Is that ok? :)

It really doesn't make that much marinade, actually. I didn't cook with it at all. I marinated my two (large) pieces of salmon, and then dumped the little bit of marinade out.

And, I don't think you have to marinate it too long - only two hours. I did do it overnight because we decided to go out to eat the night I was originally planning on making it.
